I was making pasta cabonara and there was a step in the recipe where I dump a 1/3 cup of grated parmesan into the cooked pasta

but the parmesan coalesced into seperate pieces of rubbery blobs instead of melting nicely

I'd blame the recipe but I think it was because I used pre-grated parmesan instead of grating it myself
