Why do restaurants serve unshelled shrimp covered in sauce

I use lots of lube

because the shell adds a lot of flavour and then it would be a messy business on their side to peel it off after cooking

also most people like to suck the sauce from the shell

flavor? what flavor?

the point of this argument is I don't want to get my hands messy, I am not a little kid that plays with his food
